The Kirov region supported the proposal to introduce a GOST for Russian cuisine dishes.
The Ministry of Industry and Trade and Roskachestvo have developed a draft national standard for "Russian Traditional Cuisine" and have put it out for public discussion, which will last until the end of May 2026. The document aims to establish unified recipes and ingredients for more than 130 dishes—from everyday cabbage soup to festive salads—so that tourists in any region can experience "that very" taste. The Kirov region, which actively promoted the idea of "Vyatka Cuisine" in celebration of the city's 650th anniversary, has supported the federal initiative. The region even managed to release a "gastronomic guide," which, according to the authorities' plan, is supposed to introduce guests to the local culinary identity. As we have mentioned before, active work on the "Vyatka Menu" began in 2023. At that time, in anticipation of the city's anniversary, the government and the Chamber of Commerce were concerned with creating a "recognizable Vyatka brand" in the spirit of the Dymkovo toy or the Istobensky cucumber. A competition was held, the results of which included pancakes with toppings, potato pie, and the so-called "morel soup"—a mushroom soup recipe that, however, turned out to be little known even to the locals. According to the officials' plan, these dishes were supposed to represent the region at exhibitions and festivals. However, as it turned out, the actual content of the "gastronomic guide," to put it mildly, is far from its original ambitions. Instead of opening authentic recipes and the history of Vyatka cuisine to the general public, the publication is perhaps just a promotional brochure for local restaurants. There is no collected and systematized information about what Vyatka culinary tradition actually represents. In fact, the idea of the "Vyatka Menu" has remained at the level of beautiful slogans and one-off promotions. Meanwhile, the federal GOST, according to the developers' concept, is intended to systematize knowledge and highlight the contributions of regions to the overall gastronomic treasury. In the Kirov region, there is hope that unified rules will help make local culinary offerings clearer for travelers.
